Good day everyone,
I have a question for verb conjugation of this sentence:

Consider the ill-fated investor who poured all their assets into a single stock, only to watch their fortune evaporate.
vs
Consider the ill-fated investor who poured all their assets into a single stock, only to watch their fortune evaporated.

Should it be evaporate or evaporated?
Which is better and why?
Thank you very much for your support

#1 is correct.

The construction is [watch + DO + inf.].
