Helo,
Is it "will not have the access to email" or is it "will not have access to the email"
Im leaning towards the second option but would love a native answer, im setting up a out of office reply

"will not have access to email" ("the" is not correct in both cases)
or possibly
"will not have access to my email"

If you mean "email" versus "e-mail", no, it makes no difference at all (to your original question).

I used email not e-mail because it's my personal preference, but nothing really wrong with e-mail

In the sense you want email is uncountable. See above
