I can't see anything wrong with using this adjective because any educational exhibition should stimulate or encourage kids to think seriously about things.
If you were the owner or organiser of this exhibition and you wanted to encourage schools and parents to bring their kids, then you could attract them by using these words:

An author may intend to "provoke thought" when they assume that the intended thinker is reluctant to do so.
This is risky, because the thoughts provoked may NOT promote the interests of the original author.
The "thoughts provoked" by museums might include the authenticity of the collection, the agenda of the interpretations, etc.
