Eating ice cream in the winter is hard, but eating ice cream in the summer is simple.
No need to use the word "season".
Alternatively, you could word it like this:
It's easy to eat ice cream in summer, but not in winter.

Shorten it like: "Eating ice cream in summer is easy but not in winter."

I think the best way to shorten a sentence is by adding a full stop in the place of a conjunction. If two independent sentences are joined with a conjunction, there is no harm in separating them as both of them will not lose their individual meanings.
